Spanish Tortilla—my way, using lots of veg

Spanish vegan Tortilla

Chickpeas again! They just are so versatile and inexpensive. You can make this tortilla below to feed eight people easily. The ingredients list below should not cost more than £4.00—that’s cheap for eight people!

You will need an oven proof pan that can also be used on the hob. This is a two part cooking process but you’ll be rewarded with a delicious meal at the end.


  • 2 cups gram flour

  • 2 cups water

  • 1 medium onion cut into slices

  • 1 small sweet potato chopped

  • 1 courgette coarsely grated

  • 1 red pepper chopped

  • 10 sun dried tomatoes chopped

  • ¼ tsp cayenne pepper

  • ¼ tsp fenugreek seeds

  • ¼ tsp turmeric powder

  • ½ tsp cumin seeds & salt

  • 1 clove of crushed garlic

  • 1 tsp minced ginger

  • Large handful of fresh coriander roughly chopped


  1. Preheat oven to 180ºC / 350F / Gas 4.

  2. Add all ingredients, except the onions and sweet potato into a mixing bowl.

  3. Cook onions and sweet potato in a little water in a deep oven proof pan for 4 minutes on the cooker.

  4. Add the cooked mixture to the rest of the ingredients and mix well. Return to pan and cook on a low heat for 6 minutes.

  5. Place pan in the oven and cook for 20 minutes.


Keeps for 2 to 3 days in the fridge.

Let the tortilla cool completely before you remove it from the pan. Can be eaten cold or warm. Eat it with a green salad or on it’s own. Great for taking as a packed lunch to work.
